Focus:
My goal when teaching my classes is, no matter which cuisine, to show how to make tasty meals from fresh ingredients that are easy to prepare at home.

Classes range from making crisp and delicious salsas and rich tasting seasonings to traditional holiday meals to complex moles. Seasonal ingredients are always my helpful guide for choosing the menus for my classes.

When teaching students from other countries that are visiting Mexico, I try to give them a deeper understanding of Mexican cuisine and culture. Please read my “UNESCO in the Mexican Cuisine" post. You will be surprised and will have already learned more!

Demystifying Moles:

How to use exquisite moles in many different and delicious ways! Minimum: 4 students, 4 hours, $95USD

Schedule:

Classes are booked by appointment with a minimum of 48 hours in advance.This is necessary for the kitchen to be able to shop and prepare for fresh supplies. The earlier you make your reservation, the better for the school to make sure to have the best and freshest ingredients ready for you.


Class Size: A minimum of 4 students is required per class and a maximum of 12 can be accommodated for. 


Times: Classes usually start at 10 AM and are about 4 hours long. The class is followed by a generous lunch with the foods prepared in class.


Format: There will be some surprise hands on activities, but the larger part will be demonstrations. This allows students to take notes in the provided recipe booklet. 


Menu: The focus will be on introducing students to the use of Mexican ingredients, that are mostly available outside of Mexico as well. Only basic cooking skills are needed. 


Beverages: Traditional Mexican non-alcoholic flavored waters are served. If you like you can bring your own wine or beer.


Children: Classes are only suited for children over 16 years old. 


Cost: USD 85. per class and student, or the equivalent in Mexican Pesos at current exchange rate.


Payment: A 50% deposit is required to confirmed your booking through PayPal (kirstenwest@mac.com). Final payments can be made the day of class in USD or MXN. Please, no credit cards.

 

Cancellations Policy: 1 week notice 100% refund, 3 days 50% refund, less than this time or no show, no refund.

 

Languages: Classes are in English, German and broken Spanish.


My Goal: I would like to inspire students to continue cooking and enjoying the delicious foods prepared in class when back home. The recipes will be suitable for daily meals or stress free entertaining.

 

Sharing my knowledge, accumulated over 4 decades, about Mexican cuisine and its history will truly make my class a unique San Miguel de Allende experience for you.
