Focus:
My goal when teaching my classes is, no matter which cuisine, to show how to make tasty meals from fresh ingredients that are easy to prepare at home.

Classes range from making crisp and delicious salsas and rich tasting seasonings to traditional holiday meals to complex moles. Seasonal ingredients are always my helpful guide for choosing the menus for my classes.

When teaching students from other countries that are visiting Mexico, I try to give them a deeper understanding of Mexican cuisine and culture. Please read my “UNESCO in the Mexican Cuisine" post. You will be surprised and will have already learned more!

New for 2019 - From Market to Tacos:
Visit the local market and purchase ingredients for making delicious taco fillings at La Piña Azul. We meet at the entrance to the Ignacio Ramirez Mercado where we will visit different food stands and make purchases. Then we taxi to La Piña Azul and make delicious taco fillings from our market finds. Viva tacos! (4 hours, $85 USD)

Schedule:
Classes are booked by appointment. This makes it easier for students to schedule a class at their own convenience.

 

Class Size:
A minimum of 4 students is required per class and a maximum of 12 can be accommodated.

 

Times:
Classes usually start at 10 am and are about 3 hours. Other starting hours can be arranged. The class is followed by lunch with the foods prepared in class.

Format:
Classes are a demonstration with some hands-on activities. This allows students to take notes in the provided recipe booklet.

 

Menu:
The focus is on introducing students to the use of Mexican ingredients, that for the most part, are available outside of Mexico. Only basic cooking skills are needed.

Beverages:
Traditional Mexican non-alcoholic flavored aquas are served. You can bring your own beverages if you like.

 

Children:
Classes are only suited for children ages 16+. However, an all childrens' class can be scheduled with the attendance of an adult.

 

Cost:
85 USD per student, per class or equivalent in MXN at current exchange rate.

 

Payment:
A 50% deposit is required for booking the class. Payment can be made through PayPal (kirstenwest@mac.com) or in person if in town.

 

Cancellation Policy:
One-week notice 100% refund, 3-days notice 50% refund, less than this, no refund.

 

My Goal:
I would like to inspire students to continue cooking and enjoying the delicious foods prepared in class when back home. The recipes will be suitable for daily meals and stress-free entertaining. Sharing my knowledge about Mexican cuisine and its history will truly make my class a unique San Miguel de Allende experience for you.
